why not contact them and ask where students of course go on to for employment. As far as I know most people that do the course part-time are already working in industry so if you do it full time without experience you might be at a slight disadvantage when looking for employment. THat said validation is one of the busiest areas in pharma/biopharma industries (deathly boring imo - but then I was a formulation scientist plagued by QA/QC people ;) )

two lads I knew from a previous job were doing it, and thought it was good but a little too theoretical, they felt practical experience they got from day to day stood to them better. Both came into validation from different areas completely (Microbiology and Chemistry). There is huge amounts of money to be made contracting thats true, but it can be an unstable field, (Contractors tend to be the first to go in budget cuts and also tend to need to pay their own insurance and VHI etc) and it does, regardless of whether the position has permenancy or contract status demand considerable amounts of OT. This may or may not be paid depending on where you are. I'm not certain, but I think this course only intakes every two years so it may not be starting again til 2009, again, not certain on that so you'd need to check that with the DIT :)
