In Germany in general, opening hours are deregulated, which means every bar can decide their own opening hours...You can find 24 hour bars if you want...Usual time for bars to close would be around 3 or 4 in the morning, depending on the amount of customers in it, and the area...

Hamburg is great craic I find, lots of nice little places to go, lots of stuff to see, and a really nice atmosphere...

Take a boat tour around the old "Speicherstadt" (storage town), lots of really old buildings. And go for a stroll along the Reeperbahn, the seedy part of town (must see, in my opinion). Go for a walk along the Alster. If you're lucky, there's a big funfair on "Hamburger Dom" (not the Father Ted kind...;-))

There's always some music event on in many of the music venues, and if you feel homesick, there's a couple of nice Irish pubs...

    Enjoy!

Basically as galah said. You can drink all night and public transport runs all night on weekends.

If you want to go shopping then the area around the rathaus is good. Monkebergstrasse has good stores and some of the designer and exclusive stores are over the bridge beside the rathaus. There's a new shopping center opened called the Europassage, it's ok but can be crowded on weekends. All shops are closed on most Sundays, they have brought in a rule where they can open x amount of Sundays per year but I've no idea which ones. If you are looking for clothes that are a bit more unique and not your typcial high street label then Schanze is a great place for shopping.

For going out there are 2 main areas, the Reeperbahn and Schanze. Reeperbahn would be more touristy and has plenty to offer. Theaters, cinemas, retuarants, bars, live gigs, clubs, strip clubs, brothels, etc. No shortage of things to do. The Dollhouse would be the best strip club for visiting and is good fun. Both male and female dancers and the customers in there would be 50/50 male female. Hans Albert Platz has some good bars around there and the famous Herberstrasse which is closed off to women!
Schanze has some good bars and restaurants and wouldn't be as touristy as the Reeperbahn if you are after something a little less crazy!

Galah mentioned the Hamburger Dom, this runs at certains times during the year and you can get to it on the u-bahn, stop is Feldstrasse. You can walk to the Reeperbahn from it as it's beside it!
