    Garageband is not free, however.

Audacity is a pretty commonly-used free app that has a Mac OS X version. It's a bit rough-arsed looking, but it should do the job. If you have an Intel Mac, you could also try out the beta of Adobe Soundbooth.

I use SoundStudio which came on my iBook. I've just upgraded it to version 3 which cost me 40euro.

However it was free to use for 15 uses, before you had to register it.

I use it for podcasting and for recording simple music files (ie voice and piano)
