Well this information i second hand mainly concering Bahamas area (and not directly regarding your question) etc.

    1) Expect to work A LOT!
    2) You're always representing the company, smile smile smile
    3) You can make some nice money if you save it
    4) Check what phone cards you need before you go there to call home
    5) Bring sea sick pills, headace pills and diarrea pills at the very least
    6) Bring condoms (regardless of your own sex), if nothing else the friends you make there might need them
    7) Don't expect to spend a lot (if any) time in the ports they visit
    8) Have a up to date passport

Now to answer your question (partly and from memory so a tad foggy):
To join you'll need a full medical check (I recall a price tag around 200 euro mark but was a while ago and I got a foggy memory) that tests well everything really (:.
Easiest way to apply is most likely to call the companies you want work for and see what they say directly.

My sister worked on one of those cruise ships a few years ago.
Doing massages for fat Americans... possibly fitness instruction too.

I won't name the company directly.
But... on a completely separate note ;) here's a crossword clue I found interesting...
8 letters, starts with "C", "a festival marked by merrymaking and processions"

She had a sales quota to make every day, forced to sell cosmetics and health stuff to the people she massaged. If she missed the quota, ANY day, she had to go on a one hour sales refresher course at the end of that shift.... every time. If you weren't selling well, they'ld transfer you to another ship.

It certainly isn't a cruise for the workers... by any standard.
Think she had 11 hour days, with maybe 45 mins break.
All her food was free though, and she could bring one friend over to stay on the ship for very little, as long as they stayed in the staff quarters.

The staff have their own bar, and not allowed in the public bars.
Anyone drinking too much, that it affected their work, got banned from the staff bar for a free days till they behaved.

When the ship is in port, I think they ferried all the customers off first, so you might only get a limited time on land.

    cheers,
    Owen
