I am looking at buying either a Tosibha or HP/Compaq laptop.

PC World/Dixons etc all have laptops for sale but most have either 512mb or 1 gb ram.

Can you buy these laptops with extra ram put into them or do you have to do it yourself

You can buy it in-store and they'll install extra for you, but, it's far cheaper to purchase yourself online and install it yourself, installing extra ram, especially in a laptop, is very simple and requires no knowledge of computer hardware generally speaking.

be careful when buying the laptop tho.
Usually laptop only has two memory stick slots, many of the 1g ram out there are 512+512, which mean both slots are taken up already. If you want to add more memory in yourself you'll need to take out one 512 ram.
Also check what's the maximun memory allowed by the mainboard.
Oh, and when buying the memory, make sure it will work with your mainboard, clockrate and etc. but most of the cases they just work.

Its actually much easier on a laptop - theres a little door with a slot behind it.

It's cheaper to buy a laptop with only 512mb ram and buy a ram upgrade online. As rainer says almost all 1gb laptops have two 512mb sticks and you'll have to lose one at least to upgrade.
