I have a buncha of ethernet (CAT-5?) cables lying around, is there anything I can get that will allow me to sort of patch them all together to make one long cable, or would I be better off just buying a long enough cable?

you could use couplers but it would be far cheaper to just buy a long cable, and remember with ethernet after 100m you will start to run into problems and repeaters are needed.

What are repeaters? I reckon I'll need about 50m in all, but still good to know...

You're not going to manage Gigabit speeds if you couple a few cables. You'll definitely manage 10mbit, probably 100mbit.

what you need to join them together is:

a repeater is something like this:

it boosts the signal along the way so it doesn't degrade

I can make you a 50m cable if you want? It's a lot tider and better looking then a load of cables pathed together with repeaters and will caus a lot less hassle then if one of the repeaters break somewhere along the line!
