DVD Recording from Sky+ with Dolby 5.1

I have a Sky+ box (Pace 80GB) for about nine months now and I am very happy with the sound quality when output through my AV Amp and speakers. I would like to output on to DVD some of the the recordings that are currently on the Hard Disk in the Sky box (to make room for more). I do not want to lose the Dolby 5.1 encoding when I output on to DVD.

What is the best way to do this, I have not purchased a DVD recorder yet as I am not sure which one I need.

Any help would be greatly appreciated.:)
