Check out Total Film issue 120 (this months) has a guide to some of the more prominent changes from Original to 1997 and 1997 to 2004.

Excellent.

One thing though - I don't ever remember seeing that shot of Obi Wans place, new version or old. What that actually in the original 1977 release? If so, I'm shocked as to why its so new to me...
