eircom, esat bt, utv, imagine which offer the best deal for broadband on the whole? i see imagine have a 50 euro sign up fee, this is quite a lot.

Depends what you're looking for.

If you want calls included and speed isn't a big factor, then I'd probably say BT, especially if you call the UK a lot. If you're a heavy downloader (over 20 gig a month, say), then Smart is your best bet, assuming that you can get it. You might also consider ntl, if you're a gamer.
