Learning something new every day

Every time I sit down to play poker, I feel like I should be learning something. (isn't there a poker quote about this?). I can watch the players, put them on hands, watch their reaction to flops and bets, that sort of thing, but I get the feeling that I should be learning more about the general game of poker.

However, I just can't think of anything that's not player- and/or position-specific which is really just useful for when you come up against that player again later on. Is there more general stuff I should be looking out for? What sort of things should I be trying to learn every time I play?

Notice the good players, and watch how they play certain hands.
See what hands they have at showdown and then retrace how the hand was played or get the hand history, I don't do this enough and it's a very good way to learn.
