I'm about to get a Denon 1920 dvd player which has a HDMI connector - at present I'm using a sony player with component video connection to the tv and an optical cable for the audio connection to my amplifier.

When I connect the Denon to the TV via HDMI is it possible to continue using the optical connection to the amp for audio as I know HDMI carries audio too but naturally I dont want to do that and just have the audio output throught the TVs speakers.

I would say so. There are probably settings on the new DVD player to output sound via HDMI/Optical/both.
At worst, you might have to mute the sound on the tv.
