I was wondering do the BJJ classes train with gi or without or a bit of both? Also is it possible to just take the BJJ and not take part in the other classes?

There are classes for both and classes where people wear both.

Absolutely. There is a large majority of people who just train BJJ though once the grappling bug bites they often pursue a bit of clinch and then there are some, real mean like, that learn the dreaded standup;) (we dont talk about them)
