sorry guys, but this is one of those questions that only noobs ask.

which version of linux is best to use as a web server? and which is the easiest version to learn for said application? and is there a happy medium between good and easy?

What ever version you use currently. There is no distro really geared towards web serving. However Trustix might be one if there was such a distro. :)

No matter which distro you choose, it's apache and the httpd.conf file that you are going to have to get used to...

Slackware's good on old hardware especially, and the installer is ok if you can follow the instructions.

If you are used to windows then Apache is yer only man , you can setup the windows version have a play around and you can reuse most of the config..

If performance is not an issue have a look at Knoppix / Ubuntu - they will boot off a CD and can be installed to HDD later on (both debian based)

If you're going in the bootable CD direction, this might be the one to take a look at:
    http://lamppix.tinowagner.com/

    It's Linux Apache MySQL PHP
on a Knoppix style bootable CD.
    Just add content.
