Pink Floyd's "Shine On You Crazy Diamond" is... interesting. A good 8 minutes of build-up to mull over before the song really seems to start.

I think my favourite is "Lateralus" by Tool though.

Metallica had some great intros in their day. Battery (I adore the S&M one particularly), Fight Fire With Fire, Call Of Ktulu, One, Fade To Black, Nothing Else Matters... All great for stirring you up just hearing the first bars.

Truth. It's even better live, when they tease you a little. Better still is the intro to their whole gig. Rock In Rio is a perfect example. :)
I would also add Hallowed Be Thy Name, the intro to Moonchild ("Seven deadly sins, seven ways to win...) and The Trooper. They're all songs that tell you just from the first bars, that you're in for a treat.

AC/DC's Thunderstruck and Razor's Edge are also very good.

I personally love the start to Ram It Down by Judas Priest. Lovely opening scream...
