IRC Bouncer Software?

I'll have cable by the end of the week, and eventually a fileserver, so I'm looking at installing bouncer software on the fileserver, which will be left on permanently. Any suggestions? Linux or Windows based, as I haven't fully decided yet. :) Also, how does it work? Can I use mIRC to connect, or does it work another way?

mIRC is rubbish. Use xchat.

For the bnc there are plenty to choose from. I'm currently using muh and psybnc which let you do what you need.
