Well i have a programmer friend.

He finds dual displays useful; in that if he's working on multiple source files concurrently; he can view and edit at least two at a time.

Well if your a big cs player like me you could set your spare monitor up to look behind you. People might call this cheating but i call it "hard luck on you if you cant aford another monitor".

Biggest problem with dual monitors is that is so painful to go back to single monitors. This is a serious problem.
I had a dual monitor setup in uni (2x19",1280x1024@85) which was so unbelivable usefull you couldn't imagine. I did alot of programming, web design etc. Made things so easy to do. (Lecture notes/slides on one screen, code on the other). Really great for photoshop work as well. Plus infinite other possibilites. Seriously cannot rec. dual monitors enough.
    Biggest cons against going dual:
    - once you break the single monitor barrier, 3 or more monitors dosn't sound unreasonable
    - it takes some serious getting used to single monitors if you ever need to go back.
If you are thinking about going dual, make sure you get 2x the same monitor, even though every monitor will have it's own small color differences, the difference between two different brands can be headachey - this of course depends alot on your eyes. Was a bigg problem for me, not so much for my friend who went dual.

    Good luck.
