What's the plural for this if there is one?

And if there isn't, would you structure a sentence such as 'two of the most popular cuisine' any differently so that it doesn't sound weird?

I would say "two of the most popular types of cuisine". But ther than that I wouldn't know.

What types of cuisine are the most popular?

Plenty of people using cuisines as a plural out there. The original French has a plural, cuisines, but French being what it is, the second 's' is silent, and so it sounds the same either way!
