Unfortantly I am still hunting for a summer job in the science industry. Anyone have any leads at all? :-)

Why not try and contact some Research Professors etc. and see if you can work as a lab assistant for the summer. Most probably won't pay but the experience would look great on your CV. I know that TCD research groups take on students for the summer.
