    all the symbols with sums of 9 are the same because if you take any 2 digit number and subtract both digits from it, you'll be left with a multiple of 9

    It varies from go to go, it always works because no matter what number you pick on a particular occasion it will always be that symbol.

    Then the same goes for the next time.

    LOL, you didn't trick it, you just have bad math :P As Repli said above your answer is always going to be a multiple of nine, check the table and all the multiples of nine are the same symbol.
