FF VII for me, blew me away at the time, 30+ hr games were rare back then also

Ecco the Dolphin hands down. It influenced me so much that I actually now am a dolphin and I do dolphin things.

Popular doesn't mean the best.

For me it depends on what I feel like on the day. I consider Super Metroid to be the most perfectly made videogame of all time, so well made and yet so much to discover on repeat visits. However the game I enjoyed the most was Mother 3 on the GBA.
