satay sauce

Anyone know a recipe for a nice satay sauce for chicken?
I can't find any satay sauces in the supermarkets......

Maybe...depending on what you mean.

When a lot of people talk about satay, they think "peanut-based"...which is technically wrong.

Satay is typically served with an accompanying spicy peanut sauce. Satay itself is a fairly simple (but damned tasty) marinade.

heres the one i use very easy

50g dry roasted peanuts
1 clove of garlic
200ml coconut cream (dont use milk)
juice of 1 lime
1tbsp light soy sauce
pinch crushed chillies

blend the nuts and garlic in food processor till fine
add coconut cream and whiz again
pour into a pan and heat till it darkens and thickens
add soy and lime to taste
sprinkle over chilli

If you can't find satay peanut sauce I doubt you will find the ingredients that make a satay sauce, but here you are...

9 oz unsalted peanuts
1.5 tsps shrimp paste
1 fresh red chilli
2 garlic cloves
2 or 3 tsps palm sugar
6 fl oz coconut milk
1 tbsp cider vinegar
water

Dry roast the peanuts in a frying pan without any oil. Cool.
Wrap the shrimp paste in a piece of doubled tin foil and roast in a naked flame for minute, turning now and then. Or grill it under a hot grill.

Add all the ingredients except the vinegar and coconut milk to a food processor and pulse until chunky.

Add to the pan that roasted the nuts and add the vinegar & coconut milk with some water. Cook for 6 or 7 minutes. When cooked add warm water until the desired consistency is achieved.

Taste and adjust the salt.

I never seen any in tesco's,I'll keep an eye out for it
