WW recipe with a tex mex twist

WW means weight watchers btw!

I found this recipe in an old ww cookbook and I swear by it. even the other half and the kids like it.

Fry some diced Chicken fillets in spray oil and when cooked add a tin of minestroni soup (Cambells, Baxters or whatever) and a tin of kidney beans in chilli sauce. when nice and hot put it all into a casserole dish and cover with a 40 gram bag of tortilla chips and a small sprinkling of low fat cheese. bake til the cheese has melted and yummy!

Tip 1: If you buy a bag bigger than 40 grams you will more than likely pick at them while waiting for the cheese to melt

Tip 2 Go easy on the cheese....even if it's low fat

Points are about 6 per serving if you use 4 chicken fillets per dish and go easy on the cheese.

Sounds interesting...will give it a try I think. I've never really used canned soup but am open to everything.

Below is another low-cal Mexican option - some spicy chicken fajitas. I posted this recipe up before on the Cooking & Recipes forum but unfortunately I can't find the link so I'll re-post.

Spicy Chicken Fajitas

Step 1: Make the spice mix

3 teaspoons hot chilli powder
2 teaspoons sugar
1 teaspoon paprika
1 teaspoon dried oregano (crushed with a pestle and mortar)
1/2 teaspoon garlic granules
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt
pinch ground cinnamon

Mix well and set aside.

Step 2: Slice up 1-2 chicken breasts per person, and one 1 thickly sliced pepper and 1 thickly sliced onion per person. Lightly brown chicken in a teaspoon of oil, add veg and season well with the spice mix until everything is well-coated and a red-gold colour.

Step 3: Serve with warm tortilla(s), lashings of spicy salsa, some 0% fat Greek yoghurt (or sour cream/creme fraische) and a little low-fat cheddar if you wish. This is a definite favourite in my house.

(If you are pointing - a large chicken breast is around 2 points, a medium tortilla 2 points, 1 slice Avonmore half-fat cheddar 1.5 points, 1 heaped tablespoon Greek yoghurt 1/2 point).
