Pork Neck recipies.

    Hi guys.

    Does anyone have any interesting recipes or ideas for cooking a neck of pork? I picked up a lovely cut of it over the weekend and am looking to do something imaginative with it. It's not a cut of meat I've cooked before. I was thinking of roasting it slowly with an apple and juniper berry sauce, but open to suggestions!

    What a great forum! I don't think I have the time to prepare that this week, but it's certainly on the to-do list. That chilli recipe over there is also amazing.

    I've been making that pulled pork recipe by Sparks for a good 18 months now, I usually make it once a month or so and then freeze half of it for use in a few weeks time.

    Although it looks like a bit of work its actually not. I usually start it on a Thursday evening and cover the pork in the spice rub over night and leave it in the fridge. Then at 8am Friday morning I'll quickly make the broth in under 10 minutes and get the pork on the low setting in the slow cooker for 8 hours. By the time I come home from work all I need to do is 10 more minutes work to pull it apart and then sauce it. So by Friday evening I've got 1.2kgs of delicious pulled pork waiting to be eaten and picked at over the weekend. With enough leftovers to enjoy some other time.

    So while it looks like a bit of work all it really is is short 15 minute bursts of work followed by a martination over night in the fridge, then another 10-15 mins work to get the pork cooking then finally 15 minutes to get it plate ready. The whole process takes nearly a full 24 hours but only really involves 40-45 minutes work overall which is well, well worth it given how delicious that recipe is.
