Looking for advice on cooking, freezing & reheating home-made burgers.

Making turkey burgers (turkey mince, onions, egg, oats/coconut flour, franks hot sauce) and the plan is the following:

I want to cook them all up on say a Monday. Put them in the freezer. Remove them the night before I plan to eat them & pop in fridge to defrost and then microwave the next day in work for lunch.

Is this safe / is there a better way to do this?

    Thanks!
