At our club AGM we forgot to appoint a committee member and wondering can we call another meeting to appoint the position? Or is there rules on this?

I think that they can be co-opted onto it at the next committee meeting (such as when someone leaves/dies etc.)

Your club's constitution should cover this situation. Usually there is a clause that permits members to be co-opted onto the committee. If it isn't there, consider amending the constitution the next time you meet!

    ... that's if you have a constitution:)

(ours is long lost, but we'll be presenting a brand spanking new one for adoption at our forthcoming AGM - must draft something into it allowing us to co-opt connittee members between members meetings;))

True, a constitution is a useful part of the club. You usually never need it but when you do ...

    Presumably tongue in cheek;).

CI rules require a minimum of 6 members and 3 of them must fill the following positions
    Chairperson
    Secretary
    Treasurer

There are no other CI rules over the number of committee members there must be. Although the Club constitution may specify a number what typically happens is that clubs will apply some leeway to get themselves properly "in order" and in particular in line with their own constitution

Someone dug out an old copy of ours from the founding of the club - apparently women aren't allowed.

Agreed, although it's certainly not a position that in my view should ever be decided by a "popular vote". At my club the Committee make the appointment having duly considered the requirements of the role and the available candidates

So that World Champion of yours is not a valid member of the club then. That's OK - she can certainly join ours:P

CPO a position we took very seriously after reading CI rules. One of those times the rules and regs made a huge amount of sense.
