I think your best bet is to go in to each bank and just ask for the best rate they can give, then make up your mind.

AIB's site says they buy sterling at 0.8077:

If your cheque is large enough I think you should be able to open a sterling account with either of those banks an lodge it into that. That's only if you wanted to keep it in sterling for a while..
